One of the island's most experimental cellars; its Mavrotragano-Mandilaria “St Nikolas” was named Other Santorini Wine of the Year by Tim Atkin in 2023.

Formerly Avantis Santorini and renamed Anhydrous — “without water” — from the 2021 vintage, this is one of the island’s most experimental cellars. Its St Nikolas bottling, a Mavrotragano-Mandilaria blend from old ungrafted vines aged in used French oak, was named Other Santorini Wine of the Year in Tim Atkin’s 2023 report.
