The late Haridimos Hatzidakis was among the first to bottle a single-varietal dry Mavrotragano — from the 1997 vintage, simultaneously with Domaine Sigalas — a wine that helped pull the grape back from the edge of extinction. Made organically at the cave winery in Pyrgos Kallistis from old, own-rooted vines, the Hatzidakis Mavrotragano sees several days of skin contact and long ageing in French oak. It remains one of the variety’s reference points.
